Pigs' Feet


As you pass the meat cooler in your local supermarket, how often do you chide yourself for not buying 1/2 dozen split pigs' feet? How about never; me too. That's too bad as they are the source of more protein than you need in a week. I bought some, braised them ,and got the solid jelly you see here.

I took a spoonful of this jelly and added the small amount of pork meat that resulted and added black beans, tomato, savory,marjoram, chillis and came up with this lunch.
